The magnificent Outrigger Mauritius Beach Resort on the southern tip of Mauritius at Bel Ombre recently announced four updates to delight vacationers seeking a variety of unique and delicious dishes in exquisite beachfront settings.

Many of the nuanced flavors that Vaartjes is proud of derive from the herb garden that he and the kitchen staff created.

The following changes have been made to the Outrigger’s culinary offering in Mauritius:

From the Sea: Seafood Tapas – Mauritius Style

Willie’s Rum & Crab Shack, situated right on the beach, has introduced a new range of spicy, fun and flavorsome sharing dishes – ideal for tasting with sand under your toes in front of the turquoise lagoon. The concept is tapas Mauritian style with the emphasis on crab, fish and seafood. Succulent highlights: Paella, a bucket of crabs like ‘your Mauritian mummy used to make,’ Madagascar crab claws, a pile of shrimps, Bel Ombre’s finest crab curry, or the impressive spiny lobster thermidor. Free-Flow Saturday Jazz Brunch

The Outrigger Saturday brunch (with select free-flow Champagne, wine and beer) at the delightful Plantation Club has now switched to the first and third Saturdays of the month, 10 a.m. to 2 p.m. Enjoy mouth-watering favorites such as Prawn Thermidor with Coconut Milk, Beef Wellington, ‘Mini Dog’ of Chicken with Foie Gras and Truffle, Oyster with Coffee and Macadamia Emulsion, plus much more – all to the accompaniment of the Gin N Tonic Jazz Band. Sunday Breakfast on the Beach

The Edgewater restaurant, situated between the main pool and the beach, will now showcase a special breakfast on the last Sunday of the month 8 a.m. to 11 a.m. (the next one is May 28). Named “Indian Ocean Sunday Breakfast,” it includes a juice bar, a large range of teas, sparkling wine and sweet/salty corners. Look out for Homemade Charcuterie from head butcher Pascal, Dutch and French cheeses, smoked marlin with lime, sushi and sashimi with soya and ginger, and more. MUR1800 (US$50/€45/£38) per couple. Beautiful Bar Bleu Bites

The food menu of Bar Bleu, the resort’s main bar beside pool and beach, has been updated: a range of delicious salads, panini, pizzas (try the Turkish), hot dogs (including a Mauritius variation) and flatbreads are available noon to 9 p.m. daily with a choice of refreshing drinks.
