Chef Peter Merriman, founder/owner of Merriman’s Restaurants, has been serving up Hawai‘i regional cuisine throughout the state for nearly 33 years — what started as a fine-dining concept in Waimea on the Big Island now also includes Merriman’s Honolulu (O‘ahu), Merriman’s Kapalua (Maui), Merriman’s Fish House on Kauai and scheduled to open at the end of this year as the signature beachfront restaurant at the Outrigger Reef Waikiki Beach Resort (O‘ahu).
